Spicy Corn Biryani

Ingredients:- Corn – 1 cup, basmathi rice – 2 cups, onion -1 (chopped), tomato – 2 (chopped), ginger garlic paste – 1 tsp, green chillies – 3 (chopped), oil – 3 tbsp, yoghurt – 1 cup, water -3 cups, chilly powder -2 tsp, turmeric powder – ¼ tsp, coriander leaves – ¼ cup (chopped), mint leaves – ¼ cup(chopped), bay leaf – 1, cinnamon stick – 1, cardamom - 2

Method:- Soak 2 cups of basmathi rice for at least half an hour. Drain the water and keep aside. In a vessel heat oil and ghee together and fry bay leaf, cinnamon, cloves and cardamom. Add onions and sauté till the colour turns golden brown. Add ginger garlic paste, tomatoes, chopped green chilly, coriander and mint leaves and mix well. Now add the corn kernels along with turmeric powder, chilly powder, yoghurt and salt. Sauté everything until it becomes a thick gravy. Add this gravy to the basmathi rice along with three cups of water and mix well. Cook in a rice cooker. Garnish with roasted cashews if required.
