SUGARCANE JUICE SWEET PONGAL

REQUIRED:

Raw Rice..................................= 1 Cup

Moong Dhal...............................= 1/4 Cup

Sugarcane Juice........................= 3 Cup

Jaggery Powdered......................= 3/4 Cup

Ghee.........................................= 3 Tbsp

Cashewnuts, Raisins...................= Each 6

Cardamom Powder......................= 1/2 Tsp

Method:

Dry roast moong dhal till we get nice aroma. Wash rice & moong dal and

add sugarcane juice and cook till soft. Add 1/4 Cup of water to the jaggery and

melt on a low flame. Let the syrup begin to bubble up well, set this aside. Mash

the cooked rice. Filter the jaggery syrup to the mashed rice. Add cardamom powder.

Begins to boil. Keep it for sometime in a low flame. Finally it sets in a good texture.

Now add ghee roasted Cashew Nuts, Raisins. Serve it with hot.
