Achari Paneer :

Ingredients :

250 grams paneer/cottage cheese, cubed

1/2 teaspoon jeera

2 teaspoon saunf

1 teaspoon rai

1 teaspoon kalonji

1/2 teaspoon haldi

1/2 teaspoon methi dana

pinch of hing

1 tablespoon ginger garlic paste

75 ml tomato puree

1 green bell pepper, julienned

1/2 red bell pepper, julienned

1/2 yellow bell pepper, julienned

1 teaspoon kasuri methi, crushed

½ cup fresh coriander, chopped

salt to taste

1 tablespoon oil

1-2 green chillies soaked in 1 tsp of lime juice {deseed if you like it less hot}

How to make Achari Paneer :

Heat 1 tablespoon oil in a kadhai/wok. Add the jeera, saunf, rai, kalonji and hing. Saute for a minute until fragrant, then add haldi and methi dana. Stir for 30 seconds, then add ginger garlic paste

Saute for another 30 seconds, then add tomato puree. Cover and simmer for 5 minutes until the oil leaves the sides of the kadhai/wok

Now add the cubed paneer and salt to taste. Stir gently to coat well, then add the julienned peppers, crushed kasuri methi and ½ the fresh coriander

Simmer for 5 minutes, then gently slide in the green chillies. Taste and adjust seasoning, add remaining fresh coriander

Serve hot with whole wheat tandoori rotis or naan
